Gazpacho

This chilled soup, inspired by a dish from Andalusia, Spain, refreshes
and nourishes. It's filled with sweet tomatoes, tangy green bell
peppers, cool cucumbers, savory garlic, a hint of hot sauce and basil.
It's great for serving at summer barbecues.
3 medium tomatoes, peeled and chopped ½ cup cucumber, seeded and chopped ½ cup green pepper, chopped 2 green onions, sliced 2 cups low-sodium vegetable juice cocktail 1 tablespoon lemon juice ½ teaspoon basil, dried ¼ teaspoon hot pepper sauce 1 clove garlic, minced
1. In a large mixing bowl, combine all ingredients. 2. Cover and chill in the refrigerator for several hours.
